1 Medium onion, chopped

1/4 cups Water

2 lbs Boneless pork shoulder, trimmed and cut into 4 pieces

2 tbsp Water, warm

1/2 tsp Active dry yeast

1 2/3 cups Flour

1/2 cup Water, cool

1 tsp Salt olive oil

1/4 cup Barbecue sauce

1/2 cup Smoked Gouda, or smoked mozzarella, mozzarella, or Monterey Jack cheese, shredded

3 Scallions cut into 1-inch pieces
