Dale’s Cedar Planked Salmon

Yields1 Serving

 1 cedar plank, about 6" x 12"
 4 skinless salmon filets, about 6-8 oz. each (1.5 - 2 lbs. total)
 2 tbsp Dale's Reduced Sodium Blend
 1 tbsp whole grain or Dijon mustard
 1 tbsp honey
 1 tsp chopped fresh herbs such as tarragon, dill or parsley (optional)
 1 lemon, cut into 4 wedges, for serving (optional)

Soak the cedar plank in water for 1 hour.

Remove from water and place salmon filets (on what was the skin side) down.

In a small bowl, whisk together the Dale’s, mustard, honey and herbs (if using).

Brush mixture evenly over each filet.

Meanwhile, heat ½ of a gas grill over med-high heat for 5 minutes.

Place the plank on the side of the grill, not over the flame.

Cover and cook through, about 25-30 minutes, or until internal temperature of the salmon is 125 - 130 degrees F (for medium rare to medium).

Place plank on a cooling rack and serve directly off plank.

Serve with lemon wedges, if desired.

Note: You can also prepare this over a charcoal grill, prepared with coals on only ½ of the grill.
