 1 lb Unsalted butter
 0.50 cup Dale's Seasoning or Dale's Reduced Sodium Blend
 Juice of one orange
 1 small tomato, diced
 3 of Amberjack
 1 tbsp cilantro, chopped
 1 pineapple, cored and cut into slices

To begin making Dale's Mesquite Grilled Amberjack , mix together melted butter, dale’s Seasoning, orange juice and pineapple slices.

Then, baste amberjack with mixture and place on grill.

Continue to cook 4-6 minutes on each side until flaky.

Then, place pineapple on grill, and cook 1 minute.

Finally, serve topped with diced tomatoes and cilantro.
